I had one of those Mondays that make me feel like I should be singing “Rainy Days and Mondays”. A great song by the way. Nothing is really wrong (so goes the song and my day) but I’m just feeling off. My solution is to make my idea of the ultimate comfort food dinner: Breaded tofu cutlets, mashed potatoes, gravy, and kale salad. However, the tofu technically isn’t breaded. I just coat it with spices, nutritional yeast, and ground flax seed. Yum.

My dinner is not exactly an exciting MoFo post so I thought I would post links to some of my favorite artichoke recipes I found so far during MoFo. Why artichokes? Not sure but when a food calls to me I just go with it.

KZ cakes not only has a wonderful artichoke recipe but also great instructions with pictures on how to make tortellini!
Pamela’s Modern Family Table has a really interesting artichoke pasta dish that includes mint. I can’t wait to try this one.
This one isn’t a recipe but rather a product review of an artichoke paste Caviar d’arthichauts from The Green Cuisine. I have never heard of this but from the review I’m thinking I need to go find some.
