Happy Friday blogging world! Why am I in such a good mood? Well, as previously stated it is FRIDAY and I was able to get out of the office early. However, the big thing is that I am meeting a friend for drinks later that I haven’t seen in ages. It felt surreal but this morning I woke up and found a message on my phone from someone I haven’t talked to in years. She and I were very close at one time but then she fell in love and our time together decreased more and more until before I realized it we had gone months without talking. The really tragic thing is that I was so busy with work and my silly interests that I barely noticed when the communication stopped. I was acutely aware when things started to decline but I was happy for her and just trusted that when the honeymoon phase ended we would reconnect again. We didn’t and I didn’t reach out like I should have. How many other great people have I let just slowly leave my life because I either assumed things would work themselves out or I let myself get too busy or it was just too hard to try and stay in touch when it felt like I was doing all of the work? I hope not too many but I suspect it has been more people that I want to admit. But for today I am happy to spend a little time with an old friend.
Since I am leaving in a couple of hours I have decided to make a quick little dinner of spring rolls with spaghetti squash. An odd combination I’m sure but so were Kelly and I at one time

Ingredients:
1 slice extra firm tofu cut into match sticks
1 cup roasted spaghetti squash
2 teaspoons agave nectar
1 tablespoon tamari
8 Spring Roll Wraps
1/3 cucumber cut into thick match sticks
½ avacado cut into slices
½ cup carrots cut into match sticks
Steps:
1. Sautee tofu in agar nectar and tamari until a caramelized glaze covers the tofu
2. After the tofu and roasted spaghetti squash have cooked, prepare the wraps by dipping in very warm water. I use two wraps per roll, most people use one but for me I don’t like the look of just one.
3. Add a little of the tofu, squash, avacad, and carrots to a couple of rolls and wrap
4. Eat with a little sweet and sour or peanut sauce. Yummy.

I so know what you mean, it’s so easy to drift away from people and it can happen for so many reasons but it’s good you’re meeting up now!
And those rolls look yummo, love that you served them with peanut sauce!

The get together was a little uncomfortable at first but it didn’t take long to get back into our old routine. I’m now thinking about who else I would like to reconnect with…and not just “friend” on facebook
