MOFO is here and I am so excited
I just got home from a 4 day mini-vacation with my extended family. My niece announced her engagement and we all made a road trip to Seattle to celebrate. She is such a sweetie. She isn’t in any way vegan but she is going to sample vegan bakeries for her wedding cake so I can have some at the reception. I am so blessed to have such a supportive family.

When I got home from my little trip my garden was over-flowing with tomatoes. Today has been all about making sauce but yesterday I made an amazing dinner of spaghetti squash with fresh tomatoes. Yum. I was in need of fresh food after four days of restaurant food. I love to eat out but after a couple of meals, no matter how healthy I order, I’m craving something homemade.

Ingredients:
½ medium spaghetti squash
¼ – ½ cup water
Spray olive oil
2 cloves garlic minced
1 small onion
1 tablespoon Thai basil chopped
3 chopped tomatoes (large pieces)
1 tablespoon vegan sour cream
Steps:
1. Pre-heat oven to 450 degrees
2. Cut squash in half length wise and spoon out the seeds the pierce the skin several times with a fork
3. Lightly spray with olive oil and put in baking dish cut side down
4. Pour in enough water to just cover about ¼ inch of the squash
5. Cover and bake until tender (about 45 minutes)
6. While the squash is cooking sauté the garlic, onion and basil in pan sprayed with olive oil until the onion is tender
7. Add the tomatoes and cook until well heated
8. When the squash is finished use a fork to make spaghettis strings out of the squash and spoon onto plate
9. Add tomato mixture and top with a bit of vegan sour cream

Homemade sauce is always the best! And congratulations to your niece!

Thanks!!! We’ll be doing the half marathon on Sunday, maybe a full marathon some day. You know, we get more sun than we need here in Arizona – we were hoping to experience some of the typical typical PDX clouds and drizzle! We were in Portland for the heatwave of July 2010 and now we’re coming during the longest dry spell in decades. We definitely have to work on our timing
I understand what you are saying. My brother moved to Oregon a few years before I did and the only time I ever visited Oregon was for Thanksgiving. My impression of Oregon was the rain and the clouds. And I fell in love with it and moved out from Florida. I’m missing the real Oregon weather.
I was thinking, the next time you and your wife are in town you should let me take the two of you out for a great vegan meal (maybe Bete-Lukas). I have been inspired by your blog longer than almost any other and it seems a shame not to take the opportunity to actually get to talk in person.

Jasmin Singer also did the half marathon and we wondered if we’d see her. Never did, so she must have started in a different corral. Not sure if anyone else from the vegan / enviro / new economy / permaculture / peace worlds was there.
